Beginning my career in the small New South Wales town of Barham, I started my apprenticeship at the local butcher, Barham Meats.
After 5 – 6 years of learning the trade, i decided to make the move to Melbourne and approached Peter Bouchier for a job. 12 years on, I had become a fixture in the highly successful butchery, managing the retail and wholesale operation of the business, during that time I had the opportunity to work along side so highly skilled people from all over the world that passed through the business, this gave me the opportunity to further hone my craft.
In 2012, an industry connection in Andrew McConnell resulted in some spare time spent at the Builders Arms Hotel, developing the meat program and training the chefs in practical butchery.
With a shared passion about best quality heritage meats and skilled butchery, Andrew and I opened Meatsmith ~ Specialty Butcher & Wine Merchant, in October 2015 on Collingwood’s Smith Street.
We now have 4 x retail stores located in Fitzroy, St Kilda, Brighton and Balwyn. Over my 28 + years as butcher I have been lucky to work along some very talented people, who have helped me learn and develop into the butcher I am today.
I feel that I am competent in most aspects of my trade at the highest level. I am well rounded in my skill set and could apply myself to most positions in the team, my previous role in the team was a value adding member, my style of products complemented the other members of the team’s ideas, which helps build out a unique display full of great innovative products.
