With over 40 years working in the meat industry as a Butcher, shop owner, Trainer in Retail Butchery & Game Meat Harvesting, Shannon has established immense credibility and a wide knowledge in the meat industry. His passion for “All Things Meat” has grown through competition BBQ & Butchery, and has also led him to providing butcher demonstrations to final year chefs at Le Cordon Bleu cooking school and with Intercollegiate Meat Judging. Shannon’s name has become synonymous with butcher competitions including “Butcher Wars” held during Meatstock events staged in Australia and New Zealand, growing over the past 10 years into a worldwide competition. As the publisher of the sold-out “Butchers Cookbook” Vol 1 & 2, he proudly showcased the butchery craft and the industry as a whole.
