Sbastien Syidalza is a French pastry chef and the founder of Sebastien Sans Gluten, a 100% gluten-free bakery in Sydney. He trained in classic ptisserie across France, refining traditional techniques in viennoiserie before moving to Australia. After exploring the gluten-free world, he opened Sebastien Sans Gluten in 2022, bringing authentic French pastry craftsmanship to the coeliac community.
