Nitin Kumar is a senior hospitality leader with over 20 years of global experience across Hyatt properties in Australia, New Zealand, India, and the Middle East. Currently serving as Executive Assistant Manager Food & Beverage Operations at Hyatt Regency Sydney, Nitin leads one of AustraliaOs largest and most complex F&B operations, overseeing multiple bars, a flagship restaurant, in-room dining, and extensive conference and events facilities within an 878-room hotel.
Known for his collaborative, people-first leadership style, Nitin is passionate about building high-
performing teams through mentoring, succession planning, and clear accountability. His approach blends operational discipline with empathy and adaptability, enabling teams to deliver consistent guest experiences while navigating changing market conditions.
Professionally, Nitin brings deep expertise in F&B revenue management, profitability optimisation, guest satisfaction, and large-scale operations. He has successfully led complex transformations, driven service improvements, and delivered strong performance outcomes in both stable and challenging trading environments. In 2025, he completed an Interim General Manager assignment at Hyatt Regency Brisbane, contributing to best-in-class Rooms performance and strong profit flow-through.
Nitin is also deeply committed to sustainability, diversity, and community engagement, representing senior leadership on HyattOs World of Care initiatives and partnering with NSW TAFE to support future hospitality talent. In addition to his hotel responsibilities, he currently supports ASPAC pre-opening projects, including the upcoming Caption by Hyatt Central Sydney.
Outside of work, Nitin enjoys spending time with his wife and two children, gardening, exploring new cuisines, and following Rugby Union, especially the New Zealand All Blacks.
