Joshua Hillary is the Food & Beverage Director at Solotel, responsible for leading service, food and beverage strategy across the family-owned groupOs portfolio of pubs, bars and restaurants. JoshuaOs appointment in 2023 marked a significant milestone for the business, reinforcing SolotelOs long-term vision to deliver creative, culture-led and guest-focused hospitality experiences.
With more than 20 years of industry experience, Joshua has held senior leadership roles, including Director of Operations at Duxton Hospitality Services and Food & Beverage Director at Rockpool Dining Group. He brings a strong track record in operational leadership, team development and concept execution across premium dining and large-scale hospitality environments.
At Solotel, Joshua works closely with venue teams across the group, including North Bondi Fish, to elevate food, drink and service standards, while shaping the next chapter of the groupOs growth.
