Gianluca Lonati is the Executive Chef of Aambra in Rose Bay, a newly opened Levantine inspired restaurant set within a former heritage church. The concept is an ambitious exploration of Levantine flavours, with a focus on showcasing lesser known Middle Eastern recipes through modern techniques.
Gianluca began his culinary career at the age of 15 in Milan under Michelin starred chef Sergio Mei. After seven years training in some of Milan’s leading restaurants, he further refined his craft in London at prestigious establishments including The Savoy Hotel, Mandarin Oriental, and the Thomas Cubitt Dining Room.
Since moving to Australia, he has worked at Elements Resort in Byron Bay. Upon returning to Sydney, he led the kitchen at Nour, earning a chef hat as Head Chef before stepping into the role of Group Executive Chef, overseeing venues including Nour, Lilymu, Ito, and Henrietta’s.
