Dwane is the Chief Operating Officer at Gema Group Pty Ltd, an Australian-owned company specialising in venue and event catering. With over 30 years of experience in event delivery, catering, and kitchen operations, Dwane has held significant roles in renowned establishments globally. His career includes positions at Area Executive Chef at Banyan Tree Hotels & Resorts, F&B Director at Emirates Hotels and Resorts and Head of Catering & Customer Service at Sydney Showground. In these roles, he played a pivotal part in shaping and building the food and beverage operations of the respective organisations.

Dwane has a diploma in Hospitality and is a qualified chef, having graduated from the Venue Management School in 2015. Dwane returned to the institution in 2023 to join the instructing group. In his current role at Gema Group, Dwane oversees the company’s day-to-day operations across its three functional areas: venue management, major event delivery, and aviation lounges. His leadership has helped expand Gema Group’s presence nationwide.
