David Martin is a highly accomplished culinary professional with over 20 years of experience in the hospitality industry, specialising in fine dining, hotel operations, and aged care services.

Currently serving as the Executive Chef Manager and Hotel Services Manager at St VincentOs Care Victoria and New South Wales, David oversees culinary operations and elevates dining experiences across multiple facilities. With a decade of experience in the aged care sector, he has dedicated his career to redefining aged care meals, striving to deliver exceptional quality, innovation, and nutrition to residents.

David is widely recognised as a trailblazer and mentor in the industry, known for his commitment to excellence and his ability to inspire teams to reach their full potential. His culinary style is deeply influenced by modernist cuisine, blending creativity with precision to craft meals that are both visually stunning and nutritionally balanced. His innovative approach has earned him numerous accolades, including national and international awards for his contributions to meal service innovation in aged care and he served as the Creative Director of an industry IDDSI cooking book.

In 2023, David achieved significant milestones, including being named among the top 32 Finalist Chefs nationwide in the prestigious National Chef of the Year competition. He won the 2025 Aging Australia Individual category: Innovation award, out of 3,000 nominations nationally.

DavidOs dedication to excellence extends to his team, whose collaborative efforts have been celebrated by local, national, and international media as the most avant-garde aged care dining. Most recently, DavidOs culinary skills won two gold medals at the ACF Restaurant Challenge and two silver medals at the London Culinary Salon, further solidifying his reputation as a leader in his field.
